Pesto Chicken Parmesan Recipe


Instructions

1. Prepare the Chicken:

Preheat your oven to 375°F (190°C).

Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.

Season the chicken with salt and pepper on both sides.

2. Bread the Chicken:

Set up a breading station: place the flour on one plate, beat the eggs in a shallow dish, and spread the breadcrumbs on another plate.

Dredge each chicken breast in the flour, shaking off excess, then dip it into the beaten eggs, and finally coat it in the breadcrumbs.

3. Cook the Chicken:

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown (the chicken will finish cooking in the oven).

4. Assemble the Chicken Parmesan:

Transfer the browned chicken breasts to a baking dish.

Spread 1-2 tablespoons of pesto on top of each chicken breast.

Spoon a few tablespoons of marinara sauce over the pesto.

Sprinkle the shredded mozzarella and grated Parmesan cheese on top.

5. Bake the Chicken:

Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese is melted and bubbly.

6. Serve:

Remove the chicken from the oven and garnish with fresh basil leaves if desired.

Serve with pasta, garlic bread, or a side salad.
